Chef Challenge

Chef Jason Rivas, the up-and-coming Chef de Cuisine at the Vineyard Rose restaurant has been selected to join 28 chefs to compete in this year’s Chef Challenge to represent Skuna Bay Salmon at Taste of Derby, the Kentucky Derby Culinary Experience! Chef Jason’s skillfully crafted House Smoked Maple-Cured Salmon dish will be entered as he advances in head to head competition in the next round with the competition culminating in Louisville, Kentucky for the final showdown.

Resort News | Housekeeping
South Coast Winery Resort & Spa has 132 luxury resort suites and villas and our Housekeeping team has set the standard for impeccable accommodations and extraordinary guest service. We spoke with Executive Housekeeper Julie Cort who told us that our team members are regularly recognized by guests in comment cards and surveys by name for their friendliness and keeping their accommodations orderly.  Just how does the South Coast Winery Resort & Spa Housekeeping team accomplish this day in and day out? Here’s the scoop from our expert.
Training
According to veteran housekeeping executive Julie Cort, who has spent the last 27 years in the industry, Guest Room Attendants, or GRA’s, are trained for an entire month before being placed on regular daily work assignments. During that time each GRA must become familiar with the entire resort, in addition to their other duties so that they may provide the highest level of assistance to our guests. Their extensive training is fashioned after
South Coast Winery Resort & Spa follows Luxury 5 Star standards that are set for five star resorts. Every room receives the “white glove” test, which includes making sure that all amenities and even the living plants in each room are dust-free and aligned to strict specifications. While GRA’s are taught a variety of housekeeping duties, the number one priority is guest service and satisfaction. During their month of training, every room is reviewed with a 100 point inspection sheet. They are given feedback daily, and upon completion of their training, they receive a certificate of their well-deserved accomplishment.
Leadership
Julie gives her management team full credit for the success of their department. “They really deserve all the credit,” she said. “They have consistent, open communication with each of our GRA team members who maintain the property.” They also review each of the Luxury Five Star standards weekly with GRA’s to ensure that efforts remain consistent. During these extensive reviews, GRA’s take part in group activities and team members are awarded for a job well done. Upon completion of the training process, the room inspections don’t end. Julie says, “Effective and timely feedback is really the key to making it all happen and to ensure that our guests receive the best experience possible at South Coast Winery Resort & Spa.”

This team is exceptionally proud of their work in their hotel suites and villas. The stringent inspection scoring that South Coast Winery Resort & Spa requires of its GRA’s entail diligence and an eye for detail. GRA’s are recognized each and every time a guest singles them out by name or room number.

Favorite part of the Wine Tour: I have 2 parts to talk about, first would be why is Temecula the perfect area to produce some incredible wines. Second the history of how South Coast winery, how it was just an idea and in a short time period became one of the best winery/resorts in the country.
 
Desired wine country to visit: Two is my lucky number today, France and Italy, because of the great wines and the history that both country’s offer. Plus I’ve never been to ether place. Road Trip
 
Favorite Hobby’s: Growing up on the Jersey shore surfing was my passion, that how I ended up in Southern Cal. Cycling is what keeps me young and out of trouble. Golf would be the thing that is a love - hate relationship.
