South Coast Winery produces a broad portfolio of premium wines that are 100 percent grown and produced with care under Carter’s tutelage in Temecula Valley’s Wine Country. In fact, it’s targeting to produce over 65,000 cases of award-winning wine next year under four very distinct labels: Elevation; South Coast Winery; Wild Horse Peak Mountain Vineyard; and Carter Estates.

From grapes produced by the rich Southern California soil and ample Temecula Valley sun, South Coast Winery’s talented winemakers craft blends and varietal selections with intense flavors and soft, supple structure. South Coast Winery Resort & Spa features two popular Tasting Rooms – both are open seven days a week: Vintner’s Vault and the intimate Wine Press. Winery tours are also offered daily.

Look for the grand fountain that marks the wine tasting room entrance and you’ll find a spacious room with rustic beamed ceilings and Tuscan decor. The Vintner’s Wine Vault Tasting Room walls themselves are an original painting: a mural of the entire South California Temecula Valley Wine Country and surrounding mountains. For group tours or those looking for something a bit more intimate, the Wine Press Tasting Room & Deli can be found on the east side of the property. This special tasting room is now open from 10 a.m. to 6 p.m. on weekends and daily on weekdays between the hours of 11 a.m. to 4 p.m.

South Coast Winery produces four wine collections from its Southern California vineyards, labeled by vineyard block and available at the winery, at local restaurants and shops or online.

Under the South Coast Winery label, you’ll find a select group of varietals grown in and around the Temecula and Southern California Appellation. These affordable whites, reds and rosés reflect an exuberant fruit.

Wild Horse Peak Mountain vineyard varietals of Southern California are grown at 2,200 feet above sea level. The label’s quality Cabs, Syrahs and Merlots are as big and bold as the wild-west names given to their vineyard blocks, like Dry Rock Gulch, Devil’s Hole, Lone Boulder Ridge…

Carter Estate Reserve wines, the winery’s newest label, are produced from select lots of varietals grown in the Southern California Temecula Wine Country Estate Vineyards. When did you want to try out for “CHOPPED” : About 5 years ago when the show started I wanted to give a try. Then I met one of the past contenders about 2 years ago who passed along some info. So I gave it a shot again! A few months later I got a call. 
The show was filmed in New York City , So we, my wife and 2 children travel across country for a mini  Family Vacation. 
What places did you check out while in town? Naturally we went and saw the empire state building, The view from the top is breath taking a must do while in NYC! Next my wife wanted to check out the Apple store on 5th avenue. I know apple store that that exciting but the whole building is pretty neat. Last but not least we took the kids to check out FAO Schwarz. Naturally every kid’s dream store.   
So the day of filming? Nervous? : Yes! I just wanted to get cooking! They gave us the rundown of  how things were going to go. “TV magic” But once they tell you “GO” you go .. There is no stopping just cook! 
Where you only allowed to cook what was in the mystery basket? Or did you have access to your kitchen staples. : We had a limited pantry. So Garlic, Onions, spices, kitchen tools, they had it all. Well not everything but a good majority.  
Did you do a wine pairing with the food? Or no time?  To be honest, I thought I was going to be put in middle of those special shows – where everything had to be paired with wine as an extra twist – due to my back ground. However it was not. We had access to wine – CA wine of course I just didn’t use any… although there was plenty to contemplate what you could have done prior to judging.
Anything else that you found interesting about the show? : We had to be escorted all over the set. If I needed to use the restroom didn’t get to walk over there alone. Mainly because it’s an open set so they wanted to make sure we did not see any of the Mystery ingredients. I would hear “CHEF WALKING” and someone would run over and shut the doors.

South Coast Winery Resort & Spa has 132 luxury resort suites and villas and our Housekeeping team has set the standard for impeccable accommodations and extraordinary guest service. We spoke with Executive Housekeeper Julie Cort who told us that our team members are regularly recognized by guests in comment cards and surveys by name for their friendliness and keeping their accommodations orderly.  Just how does the South Coast Winery Resort & Spa Housekeeping team accomplish this day in and day out? Here’s the scoop from our expert.
Training
According to veteran housekeeping executive Julie Cort, who has spent the last 27 years in the industry, Guest Room Attendants, or GRA’s, are trained for an entire month before being placed on regular daily work assignments. During that time each GRA must become familiar with the entire resort, in addition to their other duties so that they may provide the highest level of assistance to our guests. Their extensive training is fashioned after
South Coast Winery Resort & Spa follows Luxury 5 Star standards that are set for five star resorts. Every room receives the “white glove” test, which includes making sure that all amenities and even the living plants in each room are dust-free and aligned to strict specifications. While GRA’s are taught a variety of housekeeping duties, the number one priority is guest service and satisfaction. During their month of training, every room is reviewed with a 100 point inspection sheet. They are given feedback daily, and upon completion of their training, they receive a certificate of their well-deserved accomplishment.
Leadership
Julie gives her management team full credit for the success of their department. “They really deserve all the credit,” she said. “They have consistent, open communication with each of our GRA team members who maintain the property.” They also review each of the Luxury Five Star standards weekly with GRA’s to ensure that efforts remain consistent. During these extensive reviews, GRA’s take part in group activities and team members are awarded for a job well done. Upon completion of the training process, the room inspections don’t end. Julie says, “Effective and timely feedback is really the key to making it all happen and to ensure that our guests receive the best experience possible at South Coast Winery Resort & Spa.”
Taking Pride

The stringent inspection scoring that South Coast Winery Resort & Spa requires of its GRA’s entail diligence and an eye for detail. GRA’s are recognized each and every time a guest singles them out by name or room number.
